Make Winter Galette For Dinner This Week

GaletteThis recipe was born out of a wedding reception for Top Chef judge Gail Simmons in which renowned chef Daniel Boulud prepared the dinner. You are probably thinking: “Wait, what? That sounds like chef royalty, and you’re about to give me their recipe?” That’s right. Make winter galette for dinner this week, and you’ll be cooking like one of the best chefs in the world. Maybe.

Dough Ingredients

To get started, you’re going to need ingredients to make the dough. Here they are:

  • 3/4 cup all-purpose flour, plus more for dusting
  • 3/4 cup whole-wheat flour
  • 1/2 teaspoon kosher salt
  • 1 stick unsalted butter, cubed and chilled
  • 1/4 cup sour cream
  • 2 tablespoons ice water
  • 1 tablespoon fresh lemon juice

Filling Ingredients

Next, you’ll need to gather everything you’ll need to make the filling. Here is the list for that:

  • 2 tablespoons extra-virgin olive oil
  • 1 large shallot, thinly sliced
  • Kosher salt
  • Pepper
  • 1 cup whole-milk ricotta
  • 1 1/2 teaspoons finely grated lemon zest plus 1 teaspoon fresh lemon juice
  • 1 large garlic clove, finely grated
  • 1 teaspoon thyme leaves, plus more for sprinkling
  • 1 teaspoon minced oregano, plus leaves for sprinkling
  • 1/2 teaspoon minced rosemary, plus leaves for sprinkling
  • 1/2 pound acorn squash—seeded, peeled and shaved into ribbons
  • 1/2 pound celery root, peeled and shaved into ribbons
  • 1 small baking potato, peeled and shaved into ribbons
  • 1 large egg beaten with 1 tablespoon water
  • 1/4 cup freshly grated Parmigiano-Reggiano
  • 2 teaspoons honey, warmed

Directions

The link above will give you all the directions you need to make the galette. The entire time will take two and a half hours and it will yield six to eight servings. You can make the galette up to three hours ahead of time and re-heat it before you serve it. It should be served warm or at room temperature. Follow all those directions just right and you may just have something that tastes like it belongs on a popular cooking show.
